Gran Marnier Pudding

  • 1/2 cup lady fingers (or amaretto cookies or vanilla wafers) crushed
  • 2 Tblsp. espresso (or strong coffee)
  • 1 1/4 pounds (20 ounces) cream cheese
  • 2/3 cup sugar
  • 2 eggs
  • 1 Tblsp. Gran Marnier
  • 1 teasp. Rum

    Crush/grind cookies. I like the food processor.

    Add coffee and let stand until soaked.

    Combine everything in a mixer bowl or food processor bowl.

    Whip until mixture is blended scraping sides of the bowl to incorporate lumps. I like my food processor for this, but a capable mixer should do it as well. Hand mixing not advised.

    Spoon into serving bowls or glasses.

    Refrigerate at least 1 hour until it sets up.

    Makes 6 to 8 servings.
